Drink Recipes
1 oz Gold Tequila
1⁄2 oz silver Tequila
Triple Sec, Splash
1⁄2 oz Orange Curaco
Lime Juice, Fresh Squeezed Lime

Gold Rum
Tequila Gold
Sour Mix , Cranberry Juice , Pineapple Juice
Garnish: Apple, Cherry
1 1⁄4 oz Gold Rum
3 oz Mango Juice
Pineapple juice, Orange Juice, Lime Juice
Garnish: Apple, Cherry

Food Recipes
Batter Mix:
2 ¾ Cup Tempura
2.5 Cups Beer
1 T Cajun Spice
1/8 Cup Ice

Cut onions into rings.

Toss onions in flour then add to batter.
Fry in 350 degree oil till golden brown.
Season and serve
Fire Roasted Tomatoes - 1 Can ( 100 oz)
Tomato Paste - 3 fl oz
Sambal Oelek - 1/3 Cup
Scotch Bonnet - 1 oz
Dry Cilantro - 1 oz
Garlic puree - 1/2 oz
Coarse salt - 1/2 oz
Key Lime Juice - 1 fl oz
"White Vinegar - 1/4 fl oz
1/4" Diced Tomatoes - 6 oz
Peeled White Onions - 2 oz

1. Combine all but onions and tomatoes in a cambro container and grind with wand mixer until a smooth mixture in formed.
2. Using a wisk blend in diced onions and tomatoes. Mix until well combined
Fire Roasted Tomatoes - 1 Can ( 100 oz)
Coconut Cream - 0.5 L
Heavy Cream - 0.5 L
Garlic - t
Cilantro - 0.5 t
Chicken base - t
Clarified Butter - 1T

1. Saute garlic in the butter.
2. Add add the coconut milk and reduce 2-3 minutes.
3. Add heavy cream and simmer to a onsitency to coat the bak of a wooden spoon.
4. Add chicken base, cilantro and then adjust for seasoning.
